We used Miso (a Japanese seasoning produced by fermenting soybeans with salt and kōji rice) to cure some droolicious bacon!

Why? Because Miso cured meat is deeper, tangier, creamier and enhances it’s meatiness.

What makes this even more different is that our curing process and smoking process takes about 12 days as against factory manufactured bacon that is churned out in 2 days. 🤯

Here the important part is that the miso is a live culture which enriches its taste but helps us cure the bacon in a very specific way.

The enzymes in the miso soften the meat while the salt and sugar firm it up.
